Vegan Quiche with Broccoli and Leek

For the pie dough: 1 cup almond flour or any choice 1 cup oatmeal or any choice 1 teaspoon salt 2 tablespoons of vegetable oil 4 tablespoons soy milk For filling: 1 tablespoon coconut oil 1 leek, finely chopped ⅓ cup broccoli, finely chopped 1 cup of peanut flour or any choice 2 tablespoons of cornstarch 1 tablespoon food yeast 1 teaspoon salt Lemon juice to taste ½ cup soy milk For the top of the cake: 1 cup broccoli, sliced 1 tablespoon of scallions, finely chopped ⅓ cup of leek, finely chopped


Recipe: 1. Preheat the oven to 230 degrees. 2. In a large dish for baking, pour 1 teaspoon of vegetable oil. 3. In a large bowl, mix all the ingredients for the dough and mix until crumbly. 4. Place the mixture in a baking dish and spread with a spoon. If desired, make the bumpers for the cake. Set aside. 5. To make the filling, mix all the ingredients until smooth. Pour the mixture over the dough and distribute. 6. Garnish with chopped broccoli, green onions, and leek, bake for about 30 minutes, and allow to cool for 10 minutes before serving.
