Vegan Omelet Tofu

Ingredients: 1 medium red bell pepper, diced 1 medium carrot, diced 4 spring onions, sliced 1 clove garlic, finely chopped Half a teaspoon of ground cumin Quarter teaspoon of turmeric 400 grams of tofu cheese, cut into small pieces Half a teaspoon hot sauce (according to your taste) 2 tablespoons chopped cilantro

Recipe: 1. Heat a large skillet over medium heat with a little oil. 2. Add Bulgarian pepper and carrots, and fry for about 7 minutes, until soft 3. Add scallions, garlic, cumin and turmeric and fry for another 1 minute. Add tofu and hot sauce, cook for another 5 minutes (or until all the liquid has evaporated). 4. When serving, garnish with cilantro.
