Tofu with dried apricots

Tofu with dried apricots and homemade barbecue sauce.


Ingredients: For the sauce: 1 tsp vegetable oil 1/2 chilli, finely chopped 2 tsp paprika with smoke 1 tbsp. l maple syrup 2 tbsp. l water 1/2 onion, finely chopped 1 tsp fresh ginger, chopped 1 clove garlic, minced 60 gr dried apricots, finely chopped 100 g pickled tomatoes, finely chopped 1 tbsp. l soy sauce 1 tsp cider vinegar

For tofu:

280 gr tofu, preferably silk, cut into 12 pieces 1 tbsp. l coconut oil 1 tbsp. l paprika with smoke

Recipe: 1. To prepare the barbecue sauce, heat the oil in a pan to medium and high temperature. Add onions, garlic, ginger, chili, dried apricots and sauté for 3-4 minutes. 2. Add paprika to the pan and cook for another 1-2 minutes, and then add canned tomatoes, soy sauce, maple syrup, vinegar and water. Bring the mixture to a boil and boil for 2-3 minutes. 3. Use a blender to mix until smooth. 4. Roll the tofu in paprika. Then heat the coconut oil in a pan to a high temperature and fry the tofu slices for 2-3 minutes on each side until crisp.

5. Remove excess oil from the tofu pan, if any, and add the resulting sauce. Heat the mixture before serving.
