Gnocchi - italian dumplings, they belong to pasta. As a rule, they are made from flour and eggs. We suggest you try making vegan gnocchi with thyme and walnut.
Ingredients:400 grams of parsnip, peeled and chopped600 grams of potatoes, peeled and chopped60 ml of olive oil1 tsp. ground nutmeg100 gr flour2 tbsp. l yeast40g fresh thyme30 grams of walnuts, peeled and roasted
Recipe:
1. Preheat oven to 200 degrees. Grease the baking dish with olive oil, fold the parsnips and potatoes into it. Bake in the oven for 40 minutes.
2. Remove from oven and cool. Fold the vegetables into a blender. Add nutmeg, flour and yeast, salt to taste. Mix to the test state.
3. Put a large pot of water on the fire. Salt it. Put the dough on a floured surface, cut four pieces and roll them into sausages about 35 cm long and 2.5 cm wide. Cut the sausage of each knife into small pillow-shaped gnocchi, each about 2 cm long.
4. Cook gnocchi for 1 minute, in several batches. Take the gnocchi out of the water and dry them on kitchen paper.
5. Heat the remaining butter in the pan. Add half of the gnocchi and fry them until golden brown on each side for about 3 to 4 minutes. Put them on a plate, fry the second batch.6. Before serving, sprinkle with black pepper, thyme leaves, toasted walnuts and drizzle with a drop of olive oil.
