Tasty and easy-to-cook appetizer - rice balls with filling, baked in breadcrumbs and baked in the oven!
Ingredients: ½ cup washed fine-grained white rice 285 g chopped spinach leaves ½ cup grated vegan cheese 2 tbsp. l pesto sauce 1 tbsp. l dried dill ½ tsp chopped nutmeg 1 tbsp. l chopped flax or chia seeds, mixed in 3 tbsp. l water ¾ cup breadcrumbs
Recipe:
1. Preheat the oven to 190 ° C. Lubricate the pan with a cooking spray.
2. Bring 2 cups of salted water to a boil in a medium saucepan. Pour rice into water, reduce heat, cover and simmer for 20 minutes or until rice absorbs water. Add spinach, cheese, pesto, dill, nutmeg and chopped flax or chia seeds to the rice. Stir, season with pepper if desired.
3. Divide the rice mixture into small balls (the size of ping-pong balls). Roll the balls in breadcrumbs and place on the prepared pan. Bake for 25 minutes.
