180g unsalted soba noodles 1/2 cup peanut butter 1/4 cup brown rice vinegar 1 tbsp. l agave nectar or maple syrup 1 tbsp. l crushed fresh ginger 2 tsp. soy sauce 1 tbsp. l lemon juice 1 tsp. fresh lime peel 1/2 cup crushed cilantro 1 cucumber, finely chopped 1 small red pepper, sliced 1 large grated carrot 2 tbsp. l crushed peanuts for serving (optional)
Recipe:1. Cook noodles in boiling salted water according to package instructions. Drain and rinse under cold running water.2. Mix the peanut butter, vinegar, agave nectar, ginger, soy sauce, lime juice, lime zest and ¼ cup cilantro in a blender until smooth. Add 2-3 tbsp. l warm water if needed diluted.3. Mix noodles, cucumber, bell pepper, carrots and peanut mixture. Decorate with remaining cilantro and peanuts.
