Simple broccoli cream soup

Delicious, light and warming broccoli cream soup is a great way to start a meal. If you add potatoes or legumes to it, it will also become very nourishing and nutritious.


Ingredients: Medium broccoli (or pack of frozen inflorescences) 1 liter vegetable broth or water 1 medium onion 2 cloves of garlic 2 tbsp. vegetable oil 1 tsp dried oregano (you can use a mixture of spices "Italian herbs") Coconut milk or cream - on request Salt, pepper - to taste Greens - to taste

Recipe: Heat the oil in a large frying pan. Add chopped onion, fry until soft. Add chopped garlic, lightly fry and add broccoli disassembled to the inflorescences. Fill with hot vegetable broth or water and add herbs, boil for 10-15 minutes. Gently chop the soup with an immersion blender. Add coconut milk or cream, salt, pepper and taste. Add more herbs or salt. Serve sprinkled with herbs.
