Salad with potatoes and arugula

Want to surprise yourself or your loved ones with something unusual? Prepare a salad of two types of potatoes with arugula, which can be served both warm and cold. Add more chili, if you like it hot, or replace arugula with other healthy herbs.


Ingredients:


2 medium sweet potatoes 3 medium potatoes 2 cups arugula 2 tbsp. olive oil 1 tsp spices "Italian herbs" 1 tbsp. balsamic or apple cider vinegar 1 tbsp. vegetable oil (for frying) Salt, pepper - to taste Ground chilli and paprika to taste

Recipe:


Cut potatoes into slices. Pour oil on it, add salt, pepper, chilli and paprika, put it on a baking tray lined with parchment. Bake for 20 minutes at 180 ° C, then turn the circles and bake for another 15-20 minutes. Let the potatoes cool slightly (or completely, if you want to get a cold salad). Mix in a small bowl, olive oil, vinegar, salt, pepper and herbs. Put potatoes and arugula in a salad bowl, pour dressing, mix and serve.
