Rice noodles with broccoli and bell peppers


Ingredients:


150 grams of dry rice noodles 2 teaspoons soy sauce 1 teaspoon rice vinegar 1 teaspoon sugar 1 teaspoon chili sauce 2 teaspoons of olive oil 1/4 cup finely chopped onion 1 clove garlic, finely chopped 1 small red bell pepper, cut into thin rings 1/2 cup broccoli 1 tablespoon chopped roasted peanuts (optional)


Recipe: 1. Bring 3 glasses of water to a boil in a medium saucepan. Remove the pan from the heat, break the noodles and add to the boiling water. Let stand 5-7 minutes. Drain water. 2. In a blender, whip soy sauce, rice vinegar, sugar, chili sauce and 1/4 cup water. 3. Heat the oil in a pan over medium heat. Add onion and garlic, fry for 1 minute. Add the Bulgarian pepper and broccoli and cook for another 1 minute. Add the whipped mixture, bring to a boil and cook for another 1 minute or until the Bulgarian pepper and broccoli are soft. Add noodles and mix. 4. When serving, sprinkle with roasted peanuts.
