Quick dessert with strawberry and coconut cream

When you want something tasty and sweet, but there is no desire to stand at the stove, such express recipes come to the rescue. The strawberry season has already begun, so feel free to take it and prepare a delicate strawberry dessert, the preparation of which does not take much time!


Ingredients: 1 can of coconut milk 1 cup fresh strawberries 1 tsp lemon juice Vegan biscuits (you can use banana oatmeal or any other) 2 tsp. maple syrup, agave syrup or other sweetener Cocoa powder - for decoration


Recipe: Put a can of coconut milk in the fridge for at least 6 hours (or overnight). When you are ready to cook, open the jar without shaking it, and remove the top layer of cream. Leave the liquid in the bank and use it in the preparation of a smoothie or porridge. Put the cream in the chilled blender bowl and beat until “peaks”. Add sweetener, whisk again. Puff the strawberries with a blender or mash with a fork. Add lemon juice and, if desired, sweetener.

In cups or wide glasses, fold the cookies, breaking them into pieces. Top with strawberry puree and spread whipped coconut cream. Sprinkle cocoa powder through a sieve. Dessert can be served immediately, garnished with mint and strawberries, but it is better to put it in the fridge for 2-3 hours so that the cookies absorb the strawberry sauce.
