Pumpkin Parfait with nuts

Not only pumpkin soup, but also an exquisite parfait dessert is well made from pumpkin.


Ingredients:


400 g pumpkin puree 80 ml maple syrup 400 g chilled coconut cream 1/2 tsp tartar 50 gr oatmeal 1 tsp cinnamon 1 tsp nutmeg 1/2 tsp ground ginger 2 tsp vanilla extract 25 gr pecans 1/2 tsp salt

Recipe:


1. Preheat the oven to 180 °. Put oatmeal and pecans on a baking sheet, sprinkle with maple syrup. Sprinkle with nutmeg and salt. Stir well and fry for 10 minutes.


2. Put the thickened cream in a bowl. Add 2 tbsp. l syrup, 1 tsp vanilla extract and 1/2 tsp tartar. Beat until smooth and soft. Put in the refrigerator for 15 minutes, then mix again.


3. Add blender pumpkin puree, cinnamon, ginger, 60 ml maple syrup, 1/2 tsp. nutmeg and 1 tsp. vanilla extract. Beat well until smooth.


4. Put the dessert in tall glasses, alternating layers: pumpkin, coconut and oat layer. Before serving, clean in a refrigerator and sprinkle with a small amount of nutmeg.
