Pilaf with mushrooms and pine nuts

Fragrant vegan pilaf with pine nuts, ginger and cilantro.




Ingredients:


200 g brown rice 125 g of mushrooms cut in half 425 ml of vegetable broth 50 g of pine nuts roasted 30 g cilantro, finely chopped 25 gr vegan margarine 1 tablespoon vegetable oil 2 cm fresh ginger root, grated 1 teaspoon chili powder (optional) Half a teaspoon of turmeric Salt and black pepper


Recipe: 1. Heat the margarine and butter in a large frying pan. Add ginger, chili, rice, turmeric and stir-fry stirring for 2-3 minutes. 2. Add the mushrooms, then the vegetable broth and bring to the boil. Cover and cook on low heat for about 25 minutes, or until the liquid has evaporated. 3. Add pine nuts and coriander, cook another 3-4 minutes. 4. Season to taste and serve.
