Ingredients: 1/4 cup sugar 2 tablespoons of water 1 tablespoon honey 1 tablespoon butter 1/4 teaspoon ground cinnamon 5 large solid ripe green pears 1 sheet of frozen puff pastry working surface flour 1/4 cup heavy cream or vegan coconut cream 1/4 teaspoon ground cardamom
Step 1
Heat the sugar, water and honey. Boil until bubbles appear for about 4-5 minutes. When the mass thickens slightly and begins to darken, add oil and cinnamon. Reduce the temperature to medium. Add pears and boil. Do not stir. Instead, rotate the pan from time to time until the liquid is very thick and syrupy and the pears are tender. It will take approximately 45-50 minutes. The mixture will bubble vigorously at the beginning, but will begin to subside as it thickens.
Step 2
Preheat oven to 200 °. Roll out the slightly thawed puff pastry on a lightly floured surface. Place the puff pastry over the pear mixture in a pan and cut the edges. If you are not cooking in a pan, then simply pour the pears and syrup into a baking pan, and cover with the dough on top. Bake in a preheated oven until golden brown for 18-22 minutes. Allow to cool completely to room temperature. It will take about 2 hours. Flip on a plate.
Step 3Beat cream and cardamom with a mixer at high speed until soft peaks form. It will take about 30 seconds. Serve with a spoon of the resulting cream.
