Pad Thai with vegetables

A classic Thai dish, Pad Thai - fried rice noodles with vegetables in a fragrant sauce. This recipe suggests replacing rice noodles with zucchini and carrot noodles.


Ingredients: 2 zucchini 2 carrots, peeled 20 cherry tomatoes, cut in half 1 bell pepper, seedless and chopped 2 cups mung bean sprouts 75 gr cashew nuts, crushed 4 tbsp. l chopped cilantro For the sauce: 1 red chilli, finely chopped 60 ml tamari sauce 85 gr peanut butter 60 ml maple syrup One lime juice 3 garlic cloves, finely chopped 3 tbsp. l water 2.5 cm fresh ginger, peeled and chopped


Recipe: 1. In a bowl, mix all the ingredients for the sauce until smooth. 2. Thinly chop the carrots and zucchini into long, noodle-like ribbons. Add chopped peppers, tomatoes, onions, sprouts and cashews. Mix well. 3. Add 3/4 of the sauce and mix. 4. Serve by pouring sauce and sprinkling with coriander.
