Nut Cinnamon Cookies

The perfect combination of spicy cinnamon and crunchy walnuts for a delicious tea party.


Ingredients:


75 g dried apricots

60 ml of hot water

15 g pistachios

40 grams of walnuts

25 g ground almonds

1 teaspoon ground cinnamon


Recipe: 1. Preheat oven to 180 °. Soak dried apricots in hot water for 10 minutes, then drain the water. 2. Grind pistachios until they look like crumbs. Add the softened apricots and blend until smooth. 3. Add walnuts, almonds, cinnamon and mix again. The mixture should not be perfectly smooth - no big deal if there are a few small lumps in it. 4. Roll out the dough between two sheets of baking paper, and then, using a glass, cup or cookie cutter, cut out 10 small cookies. Put on a baking sheet and bake for 10-15 minutes until the edges are browned.

5. Cool for 5 minutes, then remove from baking sheet. If you leave them there, they can stick. Allow to cool for another 10 minutes. Done!
