Mango Spring Vegan Roll

Try the unusual vegan spring rolls - a great party snack.

Ingredients:


Several sheets of rice paper 40 g fresh mint leaves 40g fresh basil leaves 4 green onions, chopped 1 zucchini, peeled, cut in half and finely chopped 1 large carrot, cut in half and thinly sliced Half mango, cut into strips 1 red chilli, thinly sliced 50 g of salted peanuts, crushed (optional) Sweet chili sauce or any sauce of your choice (for serving)


Recipe: 1. Dip rice paper in a small bowl of water to soften it a bit (do not soak it for a long time, otherwise it will soften). 2. Place wet paper on a cutting board. Top with a few mint leaves and basil, a little green onion, zucchini, carrots, mango, pepper and peanuts. 3. Roll up the roll. Repeat with remaining paper and filling. 4. To serve, cut the spring rolls diagonally. Serve with sweet chili sauce or with your favorite sauce.
