How to cook eggplant chickpeas, recipe

Ingredients: Chickpeas - 100 gr. Eggplant - 2 pcs. Olive oil - 4 tbsp. Cilantro - 1 bundle. Parsley - 4 leaves Garlic - 2 cloves Lemon juice - 2 tbsp. White vinegar - 1 tbsp. Zira - 0.5 tsp. Paprika - 0.5 tsp. Salt - to taste


Rinse chickpeas and soak overnight in cool water. Then drain the water, rinse chickpeas, cover with clean salted water and boil for one and a half hours. Cut eggplants into cubes, salt and let bitter juice go. After 30-40 minutes, rinse the eggplants, dry them with a paper towel and fry until golden brown in olive oil. Then salt them to taste and cook until ready.

Finely chop the cilantro and parsley, interpret the cumin and mix in a deep bowl greens, spices, lemon juice and white wine vinegar. Pour the fried eggplants and boiled chickpeas in a bowl with seasoning, mix everything and let it brew for a couple of hours.
