Gluten free vegan waffles with cinnamon syrup and berries
This dish is perfect for a Sunday breakfast, when you can slowly enjoy vanilla waffles, berry filling and spicy cinnamon syrup.
Ingredients:
For the filling of the berries: 3 cups strawberries, peeled and chopped 1 cup blueberry 1 teaspoon sugar For waffles: 3 spoons of flaxseeds 6 tablespoons of water 1.5 cups oatmeal 2 cups gluten-free flour (your choice) 3 teaspoons baking powder 1 teaspoon ground cinnamon Half a teaspoon of salt 2 cups almond milk 2 tablespoons apple cider vinegar 4 tablespoons maple syrup 4 tablespoons of rapeseed oil 2 teaspoons of vanilla extract For cinnamon syrup: 1.5 cups maple syrup Half a teaspoon ground cinnamon
Recipe:
1. Heat the waffle iron.
2. In a cup, mix ground flaxseed and water well. Set aside, let thicken.
3. In a small bowl, mix almond milk, apple cider vinegar, maple syrup, rapeseed oil, and vanilla extract.
4. In a medium bowl, mix the oats, flour, baking powder, cinnamon and salt. Add the almond milk mixture to it. Mix well, add flaxseed. Stir.
5. Butter a hot waffle iron, add dough to 2/3. Close the lid. Fry for 3-4 minutes, until golden brown. Repeat with the remaining dough.6. Heat the pan over medium heat, add the ingredients for the syrup and mix. Mix berries and sugar in a bowl.7. Put the hot waffles on a plate, place the berry filling on top, pour the syrup.
