Fried Pumpkin Salad with Balsamic

Unusual salad with fried pumpkin, kale cabbage, red cabbage, balsamic vinegar and pine nuts.


Ingredients: 1 small pumpkin, peeled and chopped Half a large red cabbage finely chopped 2 red onions, peeled and sliced 200 gr cabbage kale, chopped 35 gr pine nuts 30 gr pumpkin seeds Single pomegranate seeds 2 sprigs of fresh rosemary 2 tbsp. l balsamic vinegar 3 tbsp. l red wine vinegar 1 tbsp. l olive oil Salt and black pepper to taste

Recipe:


1. Preheat the oven to 180 °. Put the pumpkin slices on a baking sheet, sprinkle with oil and wine vinegar. Season and add rosemary. Bake for 20 minutes.


2. After 20 minutes, turn the pumpkin slices over, add the onions and bake for another 15 minutes.


3. In a separate bowl, generously sprinkle red cabbage with salt. Add wine vinegar and marinate for 20 minutes.


4. Put the kale cabbage in a colander and pour boiling water over it. Let the water drain.


5. Remove the pumpkin and onions from the oven, cool. Put pumpkin, onion, red cabbage and cabbage cabbage in a deep bowl. Sprinkle with pumpkin seeds, pine nuts and pomegranate. Pour balsamic vinegar.


6. You can serve the salad both warm and cold.
