Finnish kalakukko pie with salmon and bacon

In Finland, every hostess has “her own” kalakukko recipe. This is a closed rye pie, the recipe of which certainly includes lard. It gives the finished dish a special aftertaste and amazing juiciness. For the preparation of kalakukko fit any fish. Salmon is used more often.


Ingredients:

200 g of wheat and rye flour,

250 ml of water,

800 g of salmon fillet,

150 g of fat,

30 g of butter,

50 ml of cream,

2 onions, egg.


How to cook?

In a deep bowl, combine the sifted flour, water, softened butter and a pinch of salt. Knead a homogeneous dough and leave it in the fridge for half an hour. Chop onions and lard. Fry them. Salmon, rinse, mince. Mix the minced meat with onion and cream. Salt and pepper. Roll out half the dough. Cover the bottom and sides of the baking dish with it. Put the stuffing. Cover the cake with the second half of the rolled dough. Pinch the edges. Cook at 150 ° C for about 2.5-3 hours.
