Summer cucumber salad with mint and sour coconut milk dressing.
Ingredients: 2 cucumbers 3 tsp. chopped dill A large handful of chopped mint Half red onion For refueling: 60 ml of coconut milk 3 tbsp. l lemon juice 2 tsp. white wine vinegar 1 tbsp. l olive oil 2 tsp. vegan honey or 1 tsp. maple syrup 1/2 tsp salt
Recipe:
1. Cut the cucumbers, onions, mint and dill and put in a bowl.
2. Pour coconut milk, olive oil, lemon juice, honey into a blender, add salt, mint and white wine vinegar. Mix well.
