Burrito with beans and tofu


Ingredients:


2 teaspoons vegetable oil 1 medium onion, finely chopped 1 tablespoon chili powder 2 teaspoons ground cumin 2 teaspoons oregano 450 grams of tomato sauce (preferably prepared from fresh peeled tomatoes) 400 grams of hard diced tofu cheese 2 tablespoons of lemon juice 400 grams of red canned beans 2 tablespoons canned corn 6 tortillas for tortillas 2 tomatoes, chopped finely 1 diced avocado 1/4 cup chopped cilantro Leaves of your favorite salad for serving


Recipe:


1. Heat oil in a pan over medium heat. Add onion, chili powder, cumin and oregano. Cook 5 minutes. Add tomato sauce, tofu and lime juice. Simmer for 10 minutes. 2. Spread the salad on the cakes. Heat the beans and place them on flat cakes. 3. Add on top the tofu mixture, as well as the tomatoes, corn, avocado and cilantro. Roll up the burrito.
