Bean-Vegetable Stew with Cale Cabbage

Unusual vegetable stew with beans, celery, sweet potatoes, chia seeds and cabbage.



Ingredients: 400 grams of canned black beans (can be replaced by white) 400 g canned red beans 750 ml vegetable broth 150 grams of cabbage cale 3 celery stalks, finely chopped 2 diced tubers 5 cloves garlic, finely chopped 2 red onions, finely chopped 2 large carrots, sliced 2 red hot peppers, finely chopped 1 tbsp. l tomato puree 1 tbsp. l coconut oil 1/2 tbsp. lemon juice 1.5 Art. l shredded chia seeds 1.5 Art. l oregano 1/2 tsp chipotle powder 2 tbsp. l thyme 1 tbsp. l paprika Salt, pepper, bay leaf to taste Handful of chopped parsley

Recipe: 1. Melt coconut oil in a large saucepan. 2. Add garlic and onion, roast 2 minutes. Add celery, carrots and sweet potatoes. Cook for another 2 minutes before adding the red pepper. 3. Add all the spices and mix for about 30 seconds. Add the broth, tomato puree and canned beans. Simmer for 20 minutes. 4. Add chopped cabbage, cook another 4 minutes. Add lemon juice. Season with salt and pepper. Add chopped chia seeds to thicken the sauce. 5. When serving, garnish with parsley.
