Bean Cream Soup

Beans are rich in protein and fiber, making dishes based on it are very nutritious and nourishing. We share a simple recipe for white bean cream soup that will warm the body and give strength.


Ingredients: 1 medium onion 2 cloves of garlic 100 g dry beans or 1 can of canned 1 tbsp. ghee or vegetable ghee 2 medium potatoes 2 sprigs of fresh rosemary 1 bay leaf Pinch of ground nutmeg 1 liter of water or vegetable broth ½ cup of cream or coconut milk Salt, pepper - to taste Greens - at will


Recipe: If using dry beans, soak them overnight in water. Drain, wash the beans and boil in water for 1 - 1.5 hours until soft. In a large saucepan, heat the oil. Add chopped onion and fry over medium heat until golden. Add chopped garlic and fry for another minute. Add the diced potatoes, rosemary, bay leaf and pour in water or broth, bring to a boil, reduce the heat to medium and cook until the potatoes are soft. Add the beans and cook for another 5-10 minutes. Remove the bay leaf and whip the soup with an immersion blender. Add nutmeg, salt, pepper, pour in warm cream or coconut milk and mix. Serve with greens.
