Wet: 8 very ripe bananas 250g maple syrup 75 g coconut oil, melted, if it is cold and hard 250 ml unsweetened almond milk 45 g chia seeds 1 tbsp. l apple cider vinegar 1 tbsp. l vanilla extract Dry: 126 g of millet flour (you can buy or make your own by grinding 1 cup of millet in a blender to the consistency of fine flour) 170 g of rice flour (you can buy or make yourself by grinding 1 cup of rice in a blender) 2 tsp. baking soda 1 tbsp. l baking powder 1/2 tsp sea salt 1/2 tsp ground nutmeg 185 g unsweetened chopped coconut flakes
Recipe:
1. Preheat oven to 140-160 ° C. In a large bowl, knead 6 bananas until smooth. Add remaining liquid ingredients, set aside.
2. In a large bowl, mix all the dry ingredients except coconut. Add dry ingredients to wet ingredients, mix until fully mixed. Add coconut flakes and mix again.
3. Spread the dough evenly over the bread forms, aligning the tops. Place slices of the remaining 2 bananas on top of each loaf. Bake for 45-55 minutes until the skewer inserted in the center comes out clean. Cool for 5 minutes before transferring to a wire rack to cool completely.
