Avocado Toast with Peas


Ingredients:


1/2 cup green peas

1 teaspoon olive oil Whole grain bread (gluten free if desired)

1 avocado

1/8 teaspoon red pepper

Salt and pepper to taste


Recipe:


1. Rinse and cover the peas with water for at least 2 hours.


2. Heat the olive oil in a small skillet. Drain the peas and add them to the pan. Fry until crisp, about 3-5 minutes.


3. While the peas are roasting, fry the bread and peel the avocados. Mash and mix the avocados with the spices.


4. Mix half the peas with avocado. Spread a mixture of avocado and peas on toast. Add the remaining peas on top.
