Avocado and Cocoa Pancakes

Fancy avocado pancakes with homemade chocolate sauce and nuts.


Ingredients:


For the test:


300 ml vegan milk 150 gr flour Vegan egg substitute (equivalent to 2 eggs) Half ripe avocado 2 tbsp. l cocoa powder 1/2 tsp baking powder 2 tbsp. l date (or other) syrup


For syrup:


2 tbsp. l cocoa powder 3 tbsp. l vegan milk 2 tbsp. l coconut oil 3 tbsp. l date (or other) syrup 2 tbsp. l coconut yogurt A handful of pecans


Recipe: 1. In a blender, mix milk, egg replacer, baking powder, cocoa and syrup well. 2. In a bowl, mix the resulting mixture and flour. 3. Heat the pan, add a little oil. 4. Bake pancakes for 2-3 minutes on each side. 5. Add all syrup ingredients to the blender and mix. 6. Serve pancakes with gravy and crushed nuts.
